I usually just hit F12 in Steam to take screenshots, and then you can browse them in your Steam library under 'View Screenshots'.

They're in your game directory. PC: Documents > My Games > XCOM2 > XComGame > ScreenShots. Xbox and PS: Use your console's screenshot function.
