To trigger this mission, you first need to complete the game (story mode) 100%. Yup, all those side missions, strangers and freaks, everything. The yeti, really? That's just a guy in a costume, spoiler alert. The whole 'finding the yeti' thing in GTA 5 is just a mission called 'The Last One.' Not an actual yeti wandering around the game. You gotta finish the game fully first, then it'll pop up.
