Check your keybindings in the settings menu. Sometimes they reset, leaving you unable to build.
Honestly, sometimes it's just a glitch. Try restarting your game or even reinstalling if nothing else works.
First, make sure your game mode allows building. Creative and Battle Royale have building, but modes like Team Rumble might not.
