Have you tried remapping your controls? Go to the controls menu and customize them to better suit your play style. It can make a huge difference!
Resetting to default might be a quick fix if things have gotten too wonky. Just be sure to back up any custom settings you don't want to lose.
Honestly, sometimes switching to mouse aim or a joystick can be a game changer. I found my planes were way easier to control with a joystick.
