Flying the Avenger in GTA 5 is smooth once you get the hang of it. First, get inside and press right on the d-pad to enter the cockpit. To take off, hold R2 (PS4/PS5) or RT (Xbox One/Xbox Series X/S). Then, press right on the d-pad again to switch between helicopter and plane mode. Helicopter mode for vertical lift, and plane mode for fast travel across Los Santos. Don't forget, you can use the interaction menu to autopilot!

TBH, I found it super confusing at first but practice makes perfect. Start in an open area to avoid crashing. And remember, switching modes mid-air is the key to mastering the Avenger.
