To fly in Minecraft Xbox 360, you first need to be in Creative Mode. Once you're there, just double-tap the A button to start flying, and use the left stick to move around. Hold the A button to ascend and press the B button to descend.
If you're playing in Survival Mode, sorry, no flying for you! Try switching to Creative Mode in the game settings, and then double-tap that A button to zoom through the skies.
Honestly, flying is super easy in Creative Mode. Just double-tap A, then use A to go up and B to go down.
