Alt+Enter is your friend here. Pressing these keys together while the game's running should switch it to full screen. Works like a charm for most games, not just PvZ.

Just play it in windowed mode; it's not like going full screen is gonna make those zombies any less relentless.

To go full screen in Plants Vs. Zombies on Windows 7, all you gotta do is hit F11 once the game starts. Boom, full-screen mode activates! If that doesn't do the trick, try adjusting your game settings from the main menu; look for a graphics or display option where you can manually set the game to full screen.

I managed to get mine to full screen by updating my graphics driver first and then pressing F11. Not sure if it was the update or just luck, but it's worth a shot!
