You'll need to unlock the Dominating Presence ability, then use it to charm humans. Once charmed, take them to a Servant Coffin and convert them. Enjoy your new minion!

So, first you need to build a Servant Coffin, which you can unlock after beating the 'Armorer' boss. Then, charm a human using your Dominating Presence skill, and voila, you got yourself a servant!
