To get Espeon, you need to evolve Eevee during the day while walking it as your buddy for at least 10 KM. Make sure to collect two Eevee candies too!

Walk 10 KM with Eevee as your buddy, then evolve it during the daytime. Simple as that!

Just rename your Eevee to 'Sakura' and evolve it. Trust me, it works every time (but only the first time).
