The Blessed Apple drops from any enemy in the Hallow biome, but you gotta have patience, it's all about the grind! Your best bet is during a Solar Eclipse or a Blood Moon when the spawn rates go through the roof. Just keep defeating those unicorns and other Hallow enemies, and before you know it, you'll have that magical means of summoning your very own unicorn mount!

Just farm unicorns in the Hallow. It drops, just rare.

Spent like 10 hours farming for it, only to realize I was in the wrong biome. Make sure you're actually in the Hallow. Those unicorns won't show up just anywhere!
