Pro tip from someone who's been there: Focus on exploring the underground and cavern layers of the world. Took me a while but finally struck diamond by just keeping at it. Spelunker potions are a game changer though, lights up all the ores like a Christmas tree!

Just mine. Diamonds aren't that hard to find if you're patient. Look in the underground layer, no big secret.
