You can use the naming trick! Name your Eevee 'Pyro' for Flareon, 'Rainer' for Vaporeon, and 'Sparky' for Jolteon. Just make sure you haven't used the name before!

Pro tip: Use the mossy lure module to get Leafeon or the glacial lure module to get Glaceon when evolving near it. Easy peasy!

For specific evolutions like Espeon or Umbreon, walk your Eevee as your Buddy for 10km and then evolve it during the day for Espeon or at night for Umbreon.
