To access the legacy console edition of Minecraft on PS4, start the game and select the option to go back to the older version from the main menu. Sometimes it can be labeled as 'Editions' in the menu!

Just start Minecraft on your PS4 and in the main menu, there should be an 'Editions' button. Click it to switch back.

From my experience, the ‘Editions’ option should appear on the main screen of Minecraft when you boot it up on your PS4. If it’s not there, make sure your game is updated!
