You'll need to plug your headset into the USB port, then navigate to 'Sound Settings' and adjust 'Audio Multi-Output' to 'On' so game audio directs to both the TV and headset.

Honestly, the easiest way is to use a headset with an optical audio connection and plug it directly into the PS3.

You might need to use RCA cables with a USB adapter if your headset doesn't have a direct connection to the console. Bit of a hassle but works!
