Just use Revali's Gale lol. Why climb when you can fly? Best way to reach any high place in the game, including Gerudo Tower.

Honestly, Gerudo Tower was a bit of a letdown for me. Found it easier to reach than most other towers in the game. Just stack up on stamina items and you're golden.
