In Undertale's Pacifist route, you can earn gold by sparing enemies. Just keep being nice, and you'll still earn money!

Personally, I farmed gold by playing the Piano Puzzle and the Dog Shrine mini-games. Both are pacifist-friendly and can get you some gold.
