Just keep checking the Appearance section under the Assets tab. Sometimes new headwear items pop up there, especially during special events.
The easiest way to get headwear is to buy it in the customization options with in-game currency. If you want to keep it simple, that's the way to go!
You gotta become a Bitizen! Once you unlock Bitizenship, a whole wardrobe of classy headwear is available for purchase.
