To unlock King Dedede, you can play through the World of Light adventure mode until you find him or beat the Classic Mode with Donkey Kong or any of his unlock chain characters!
World of Light is the way I got King Dedede. You'll find him in the Sacred Land sub-map. Good luck!
Honestly, just spam VS matches. He'll show up eventually!
