Just have your Sims do task after task non-stop. No sleep breaks! They'll understand, probably.
You can't extend the time on a quest in Sims FreePlay, but you can plan ahead! Focus on the tasks that take the longest time first and use Lifestyle Points to speed things up if you're running behind.
Seriously though, there's no way to officially get more time on a quest. You gotta manage your tasks efficiently from the start!
