Just jump over some sheep while playing a Kiwi character. Easy peasy!
So, I tried this myself. Play as the default Kiwi or Kiwi Cat and find the sheep in the game. Jump over them around ten times, and boom! Got it!
All you gotta do is play as any Kiwi character and keep an eye out for sheep. Jump over them a bunch, and you'll get that New Zealand character!
