Just go to your profile, tap the menu (three lines), select 'Settings and Privacy,' then 'Your Activity,' and 'Recently Deleted.' You might find your notes chilling in there!

I've lost notes before too. Your best bet is to check 'Recently Deleted' under 'Your Activity' in settings. Worked for me!
If the notes were in your story, there's a good chance they're in the Archive section. Head over to your profile, tap the three lines on the top right, and select 'Archive.'
