Hold down the 'action' button near the camel. It's usually the same as the 'mount' button but check your controls if you're stuck.

You really want to get off that camel? Just press the 'mount/dismount' button. Check the controls in the menu if unsure.

Pro tip: In Assassin's Creed Mirage, you can get off your camel by pressing the 'interact' button. On Xbox, it's usually 'Y', and on PlayStation, it's 'Triangle'.
