You can use specific evolution items or conditions: evolve Eevee into Espeon by making it your Buddy and walking 10 km, then evolving it during the day. For Umbreon, do the same but evolve it at night.

Create some mossy or glacial lures at Pokéstops to get Leafeon and Glaceon. Spin the Pokéstop with the correct lure and then evolve your Eevee.

Nickname your Eevee to control the evolution: use 'Sparky' for Jolteon, 'Rainer' for Vaporeon, 'Pyro' for Flareon, 'Sakura' for Espeon, 'Tamao' for Umbreon, 'Linnea' for Leafeon, 'Rea' for Glaceon, and 'Kira' for Sylveon. This works once per evolution type.

Pro tip: For Sylveon, just make Eevee your Buddy and earn 70 hearts with it. Easy peasy, Sylveon squeezy!
