To enable performance mode on Xbox Series S, go to Settings -> System -> Console Info -> OS Version and make sure your console is up to date. Once that's done, navigate to Settings -> General -> TV & Display Options. Choose the resolution you want (1080p for smoother gameplay). Finally, go to the game's settings and select the performance mode if available!

I found that on most games, you can enable performance mode directly in the game's settings menu. Check there first!
