You can't completely remove 'Ask Meta AI' from Instagram, but you can disable notifications for it by going into your settings and turning off notifications for the feature.
I had the same problem! Just tap and hold the chat thread with 'Ask Meta AI' in your DMs, then press 'Delete Chat'. Problem solved!
