To turn off the PC stats overlay on your Steam Deck, press the Quick Access button (the one with the three dots), navigate to the Performance tab, and toggle the Performance Overlay off. Easy peasy!

Hit the Quick Access button, go to the Performance tab, and disable the Performance Overlay. Problem solved!

You can remove the PC stats by pressing the Quick Access button, heading over to the Performance tab, and switching off the Performance Overlay.
