Just dig a hole to hell and let gravity do the work. Water evaporates in the Underworld, so it's a natural way to get rid of excess. Might take a while, but it's pretty much hands-off.

Easiest way? Buckets. Just craft or find a bucket, scoop that water up, and dump it somewhere you won't mind it. If you've got a LOT of water to deal with, though, you might want to hollow out a containment area or find a cavern you don't care about flooding. Another fun method is using the Super Absorbant Sponge if you're lucky enough to have it. It sucks up water endlessly and is way faster than using buckets.

Honestly, just use bombs. It's not the 'correct' way, but blowing up the area around the water can redirect it or open up a path to a cavern where it can flow away. Plus, it's fun.
