Easiest way? Go deep into the Underground Crimson/Corruption biomes and farm enemies there. The drop rate for Souls of Night increases the deeper you are. Make sure to set up a proper battle arena with platforms to dodge and weave through the enemies. Campfires and heart lanterns for health regen help a ton too!

Just fight a bunch of the Eater of Worlds or Brain of Cthulhu in their respective biomes. They drop Souls of Night like it's going out of fashion.

Farm the King Slime in the underground Crimson/Corruption! Each slime spawn gives a chance for Souls of Night. Easy and kinda fun!

Honestly, just set up a water candle and battle potion to increase spawn rates and go ham on the mobs in the underground corruption/crimson. It's a grind, but it's effective.
