Check your display settings in your OS to make your preferred monitor the primary one before launching Spyro.
Sometimes games don't like switching monitors. Try starting Spyro with only one monitor connected and then plug the second one in.
If all else fails, some players have had luck tweaking their graphics card settings via NVIDIA Control Panel or AMD settings.
Right-click on your desktop, choose 'Display settings', and set the monitor you want as the main display. Then launch Spyro.
