Aside from the nickname trick, you can evolve Eevee into Espeon or Umbreon by walking with it as your buddy for 10 km and then evolving it during the day for Espeon or at night for Umbreon. For Glaceon, use a Lure Module at a PokéStop; an Ice Lure for Glaceon or a Mossy Lure for Leafeon.
