Unfortunately, you can't officially revert back to an older version of Minion Rush. Games update to improve and add new features, so it's all about embracing the new Minion madness!
I know the nostalgia hits hard, but sticking with the updated version is the best route. Updates usually come with better features and less bugs.
Best you can do is try to find an old APK file for the version you want. Just be careful where you download it from, you don't want any surprises on your device!
