To unlock the Paleontologist in Crossy Road, you need to play as any of the dinosaur characters from the Dinosaur Update and collect the fossil items that appear on the ground. Once you collect enough fossils, the Paleontologist will unlock!

To unlock the Paleontologist, just grab fossils while playing as a dino. Easy peasy and fun!

Just play as a dinosaur character and grab those fossils you see on the ground. Collecting enough of them unlocks the Paleontologist. Simple as that!
