Easy peasy! Check your garage or driveway first. If it's not there, go into build mode and place it down.
You can always respawn your vehicle from the Vehicles tab. Click on the car icon in the bottom right, then select the car you want!
Hot take: It's usually just stuck because of a small glitch. Try going into build mode and back. Works 90% of the time for me.
