To give a Mercy in Mortal Kombat 11, hold the L2 button (Left Trigger for Xbox) and press Down, Down, Down while standing at mid-range from your opponent during the 'Finish Him/Her' screen. It's a nice way to show your opponent you care... before you brutally finish them off again.
