To get back to the Pacifist route, you need to make sure you've completed a Neutral route first, then reload your save before fighting Asgore. After that, go hang out with Undyne at her house and call Papyrus for hints!

The trick is to not kill anyone! Just spare all monsters you encounter and make friends. It's worth it for the feels!
