To pick up items in Lethal Company, just walk up to the item you want to grab and press the 'E' key on your keyboard. It's that simple! Make sure you're close enough, though. Sometimes it might seem like you're right next to it, but the game wants you to be just a smidge closer to actually interact.
I've been playing Lethal Company since it launched on Early Access, and picking up items can sometimes feel a bit finicky. What worked for me is to not only press 'E' but also to ensure your character is facing the item directly. The game can be a bit picky about positioning and orientation.
