To guarantee a specific Eevee evolution, you can use a nickname trick! Rename your Eevee before evolving it: 'Sparky' for Jolteon, 'Rainer' for Vaporeon, 'Pyro' for Flareon, 'Sakura' for Espeon, 'Tamao' for Umbreon, 'Linnea' for Leafeon, 'Rea' for Glaceon, and 'Kira' for Sylveon. Note that this trick only works once per evolution type.

For Espeon and Umbreon, walk your Eevee as your buddy for 10km and then evolve during the day for Espeon and at night for Umbreon.

The nickname trick is a one-time thing. After that, use the Mossy Lure for Leafeon and a Glacial Lure for Glaceon. Easy peasy!
