Go to your Facebook profile > Photos > Albums. Edit the privacy settings for each album individually to 'Only Me'. You'll be incognito!
Honestly, the best way to hide your photos is to delete them if you don't need them online at all.
From your profile, navigate to Photos, then Albums. For each album, click on the three dots and choose 'Edit Album'. Change the privacy setting to 'Only Me'.
