Unfortunately, Instagram doesn't have a feature to hide just your followers and following lists. Privacy settings are your best bet!
Make your Instagram account private, and only approve followers you trust. This will keep your follower info mostly under wraps.
Short answer: You can't just hide your followers/following lists. Private account might help though.
