Set your account to Private to hide your following list from the public. Only approved followers get to snoop then!

Actually, you can't completely hide your following list, but setting your account to private limits who can see it.

I've tried it myself: switch to a private account and voilà, your following list is hidden from non-followers. Works like a charm!
