You can't directly hide a single post from someone, but you can create a 'Close Friends' list for Stories. Spoilers: they won't see what's not for them!
Block the person you wanna hide the post from. They won't see anything you post unless you unblock them later.
If you have details of the person, you can add them to your 'Restricted' list so they can only see public content and not your posts.
Just make your account private and remove that person from your followers. Problem solved!
