You can't exactly hide who you follow, but you can make your profile private! Go to Settings -> Privacy -> Account Privacy, and toggle on 'Private Account.' Only your followers will be able to see your follow list then.
I've been using Instagram for years and the best way to control who sees your followers is to set your profile to private. This way, only your approved followers can see who you follow.
Sorry, there's no direct way to hide followers. Instagram likes transparency!
