Create a 'Close Friends' list for your Stories and only share with people you trust. Keep your posts hidden from the others!
Use the 'Restrict' feature! Go to their profile, tap the three dots, and select 'Restrict'. They won't see your posts anymore.
When you switch your account to private, manually approve followers. Remove those you don't want to see your posts.
Just block them. It's quick and they won't see anything you post.
