Simply switch your profile to private by going to Settings -> Privacy -> Account Privacy -> Private Account. Done!
You can't fully hide who you're following from people who already follow you, but making your account private will hide it from everyone else.
Honestly, there's no way to hide it completely. Just make your account private and be selective about who you approve as followers.
