For those without an HDMI port on their PC, use a capture card. Connect the Xbox 360 to the capture card via HDMI, then the card to your computer via USB.

Plug one end of an HDMI cable into your Xbox 360 and the other into your computer's HDMI input if it has one. Voila, you're good to go!

I do this all the time! Just grab a VGA cable if your computer has a VGA input, and you're set. Remember to handle the audio separately though.
