To increase your pot size in Hogwarts Legacy, you gotta progress in the main storyline. There's a specific quest named "The Room of Requirement" which, once completed, gives you the ability to upgrade the Room, including your pot sizes for potion brewing and plant growing. Keep playing the main quests, and you'll get there!
