Just rip the discs and make sure you place everything in the same folder. It's straightforward and shouldn’t take long.
IMO, it's quicker if you use FSD (Freestyle Dashboard). Rip both discs, drop them in one folder, and you’re good to go!
I’ve done this a bunch of times. Rip each disc to your PC, then use a file manager like XeXMenu on your JTAG Xbox 360 to copy the game files over. Place Disc 1 and Disc 2 in the same folder; it usually works like a charm!
