You'll need to have the game files in a supported format (usually .pkg). Make sure your USB drive is formatted to FAT32, put the files in a 'GAMES' folder, and then use 'Install Package Files' in the PS3 menu.

First, format your USB drive to FAT32. Then, create a folder named 'GAMES' on the USB. Copy the game files (make sure they're in the correct format) into that folder. Plug the USB into your PS3, go to 'Game', 'Install Package Files', and select the game to install. Enjoy!

I've done this before! Format your USB drive to FAT32, create a folder named 'GAMES', and place your game files inside. Then plug it into your PS3, go to 'Game' -> 'Install Package Files', and select the game. Simple and easy!
