To join gymnastics in BitLife, age up your character to a school-going age, then go to the 'School' tab, select 'Activities,' and join the gymnastics team if it's available. Sometimes you'll need good athletic stats, so keep your character active!
Make sure your character is a kid or teenager and head to the 'School' tab, then look for 'Extracurricular Activities.' Join the gymnastics team if it's there.
