To bail out of a plane in GTA San Andreas, just tap the 'enter/exit vehicle' button. On PS2 it's the Triangle button, Xbox it's the Y button, and on PC you hit the Enter key. Remember to have a parachute equipped before you leap for a smooth landing!

Don't even think about it without a parachute. Best case, you're looking at a respawn. Worst case, you wake up in San Fierro Hospital with a hefty medical bill. Equip one first, then jump to your heart's content!

Literally just hit the same key you'd use to get into a vehicle. But dude, make sure you've already snagged a parachute. Otherwise, it's gonna be a real short trip to the pavement.
